Last-minute healthy holiday dish: Couscous and Panko-breaded baked chicken #ShefitRecipes

Merry Christmas Eve! Do you suddenly yourself needing an extra entree for your holiday table, and fast? Quickly impress the in-laws, unexpected dinner guests and picky little elves with this stress-free and very easy chicken dish! chicken-panko-couscous

Ingredients (serves 4-6):
  • One (1) lb. cut-up chicken breasts, trimmed and thawed
  • One (1) cup Panko breadcrumbs
  • One-half (1/2) cup couscous
  • Two (2) tbsp. grated Parmesan cheese
  • Two (2) tbsp. extra-virgin olive oil
  • Course salt, to taste
  • Freshly-ground black pepper, to taste
Mix the dry ingredients well and spread onto a large surface. Coat the chicken breasts with the EVOO, then evenly coat with the dry mix. Place on baking sheet, and bake and 375°F for about 35-40 minutes, depending on your altitude and oven. (Ensure internal temperature of the chicken is 165°F.) Serve immediately. Refrigerate for up to three (3) days. Freeze for up to 30 days. BONUS TIP: Double the dry ingredients and slice the breasts into tenders or nuggets to keep even the crankiest elves and uncles in check. Reduce cooking time by 5-10 minutes (still check for internal 165°F temp). Skip the dip and serve alongside pineapple chunks or cherry tomatoes. And, serve with those frilly little toothpicks if you can spare them.
