Super Easy SUPERFOOD Winter Stew: #ShefitRecipes

Not every part of the country is under a deep freeze this week, but if yours is like ours, this “super” recipe from our friend Susie R. of the “Real Food Real Fitness” blog will be sure to keep you warm… and amazingly healthy! shefitrecipes-superfood-turkeystew This delicious stew is full of amazing superfood ingredients that are sure to keep your immune system working in tip-top shape as you get through the rest of winter. Super Easy Superfood Winter Stew Ingredients and cookware you’ll need:
  • 1 pound organic pastured ground turkey or beef (I use turkey in this recipe)
  • 1 TBSP organic ghee
  • 1 sweet potato
  • 1 onion
  • 6 cloves garlic
  • 1 red or yellow pepper
  • 1 24-oz. glass jar of organic strained tomatoes (e.g. Bionatura)
  • ½ can BPA-free black beans (e.g. Eden Organic)
  • apple cider vinegar
  • cumin
  • tumeric
  • chili powder
  • sea salt
  • food processor, Vitamix, or blender
  • Dutch oven pan
  1. Add the ghee and turkey (or beef) into the pan. Brown until no longer pink.
  2. Cut up the sweet potato, onion, and pepper. Add these along with the garlic into the food processor. Pulse until finely chopped.
  3. Add the vegetables to the meat mixture and stir until combined.
  4. Pour a jar of strained tomatoes and a ½ can of black beans into the pot. Stir.
  5. Add 2-3 TBSP chili powder, 1 TBSP cumin, 1 tsp tumeric, 1 TBSP apple cider vinegar and a generous sprinkle of sea salt to your liking.
  6. Stir the stew well. Bring to a boil, then lower the heat, cover and simmer for 30 minutes until the all veggies are cooked.  At this point, it’s ready to eat; however, the longer you leave it sit, the more flavorful it becomes.
Start the stew around lunch time and simmer for an hour then turn heat off and keep it covered on stove. The pot stays warm for quite some time and at the dinner hour turn on low to warm up a bit. Serve with shredded raw cheddar cheese and raw pumpkin seeds! Here’s hoping this superfood stew will keep our Shefit™ fans warm and healthy all winter long!
