This super easy, delicious salmon recipe will become one of your weeknight staples. Citrus is a great addition to any seafood dish but taking the extra step to reduce the juice will add even more flavor. You can make the glaze ahead of time too! Salmon is simple to bake. Let the oven do all the hard work for you and dinner will be on the table within 15 minutes! 

Makes 2 servings 

INGREDIENTS: 

  • 2 6-ounce salmon filets
  • 8 ounces grapefruit juice
  • 1 teaspoon crushed pink peppercorns
  • Kosher salt to taste 

PREPARATION: 

Preheat oven to 400 degrees. 

Add grapefruit and peppercorns to a saucepan and cook over medium heat until reduced by half. This will take approximately 20 minutes.

Season the salmon with salt, then brush on the reduced grapefruit juice to the tops of the salmon. Bake for 8-10 minutes.
