CHEFIT: WINTER CITRUS SALAD RECIPE

    Your holiday table will shine bright with the addition of citrus salad! Citrus is in season during these chilly months and it's the perfect food to fight off cold and flu season. Citrus fruit contain high amounts of vitamin C which helps to strengthen our immune system and fight those germs. The addition of fresh mint and a honey lime dressing make this salad a flavorful and healthy way to celebrate the holidays. 

    Serves 4-6 as a side. 

    Ingredients: 

    • 1 pink grapefruit, supreme cut 
    • 2 naval oranges, supreme cut 
    • 2 red oranges or blood oranges, supreme cut 
    • 1 pomegranate, seeded
    • 3 kiwis, skins removed and sliced
    • 2 tablespoons lime juice
    • 1 tablespoon honey
    • 1 teaspoon lime zest
    • Salt and pepper to taste
    • 2 tablespoons fresh mint, thinly sliced 

    Preparation: 

    Prep all citrus fruits by using a pairing knife to remove all of the skin and pith, cut each citrus fruit into wedges.

    Once all fruit has been prepped, combine grapefruit slices, orange slices, kiwi slices, and pomegranate seeds in a bowl. 

    Next, combine lime juice, honey, lime zest, and season with salt and pepper to taste. 

    Pour over the fruit then top with fresh mint and enjoy.
