Peaches are the star of this simple breakfast dish. Broiling your peaches brings out their natural sweetness and creates a delicious creamy texture. Vanilla skyr yogurt is similar to Greek yogurt and high in protein. Finish this dish with a drizzle of honey and your favorite granola for a balanced breakfast.

MAKES 2 BOWLS
2 peaches, sliced into wedges
1 cup of vanilla skyr yogurt
1 tablespoon of honey
1/4 cup of granola
Mint leaves, for garnish
Place peach wedges on a sheet tray and broil for 5-7 minutes. Let peaches cool for 1-2 minutes before placing on skyr.
Divide the yogurt between two bowls then place broiled peach wedges on top. Drizzle the peaches with honey then place granola and mint leaves on top. Enjoy immediately.
