Set it and forget it recipes are a MUST for my weeknight rotation! This recipe is my favorite way to create delicious chicken fajitas. They can be served traditionally with tortillas or as a fajita bowl with rice and beans. The combination of lean protein and antioxidant rich tomatoes and peppers make this healthy meal that's easy to make and tastes so good!  

*Makes 4-6 servings* 

INGREDIENTS: 

  • 2 pounds boneless, skinless chicken breast
  • 14.5 ounce can diced tomatoes, no added salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/4 teaspoon cayenne powder
  • 2 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 lime, juiced
  • Cilantro, for serving 
  • 10 small whole wheat tortillas 

PREPARATION: 

Add diced tomatoes to the bottom of the crockpot and place chicken on top. 

Add the chili powder through the cayenne powder to the top of the chicken. Cook on high for 3 hours or low for 7 hours. 

Add sliced bell peppers to the top of the chicken and cook for 1 additional hour.

Shred chicken in the slow cooker and add the freshly squeezed lime juice. Add cilantro and serve.
