Holiday meals do not have to be stressful when you utilize a one pan recipe. These easy chicken thighs require less than 5 minutes of prep time before being roasted off in the oven. The fresh cranberries and thyme give this meal an effortless holiday feel. Utilize leftovers by topping your salad for an extra protein boost. 

 

INGREDIENTS: 

  • 6 chicken thighs, skin on, bone in 
  • 1 tablespoon of olive oil
  • Salt and pepper, to taste
  • 2 tablespoons of balsamic vinaigrette 
  • 3 tablespoons maple syrup
  • 1 cup fresh cranberries
  • 2-3 sprigs of thyme

PREPARATION: 

Preheat oven to 375 degrees. Coat chicken thighs in olive oil and season with salt and pepper. Place skin side down in a baking dish and bake for 25 minutes. 

Combine balsamic vinaigrette and maple syrup. 

Remove chicken from the oven and turn over. Add cranberries to the dish and pour the balsamic and maple syrup over top, add thyme sprigs to the dish. 

Return to the oven and cook another 20-25 minutes until chicken is cooked through and the thighs have browned. Serve with fresh thyme leaves on top and enjoy!
