- 2 large beets (peeled, roasted and chopped)
- 1 can (15 oz.) garbanzo beans (chickpeas)
- 1 lemon (juiced)
- 2 cloves of garlic (minced)
- ¼ cup tahini
- 2 teaspoon ground cumin
- 1 tablespoon extra virgin olive oil
- ¼ tsp sea salt
- Pepper to taste
- 1 tsp choppped dill for garnish
Directions:
- Wash and peel the beets, wrap them individually in foil, and roast for 1.5 hours at 350 degrees.
- In a food processor, add the chickpeas, lemon juice, minced garlic, tahini, paprika, salt, olive oil and pepper.
- When the beets are cool enough to handle, add them to the food processor and purée all ingredients together.
- Serve in a bowl and sprinkle with dill for garnish.
