Pre or Post Workout Healthy Snack: Easy Gluten Free Beet Hummus Recipe

  • 2 large beets (peeled, roasted and chopped)
  • 1 can (15 oz.) garbanzo beans (chickpeas)
  • 1 lemon (juiced)
  • 2 cloves of garlic (minced)
  • ¼ cup tahini
  • 2 teaspoon ground cumin
  • 1 tablespoon extra virgin olive oil
  • ¼ tsp sea salt
  • Pepper to taste
  • 1 tsp choppped dill for garnish

 

Directions:

  • Wash and peel the beets, wrap them individually in foil, and roast for 1.5 hours at 350 degrees.
  • In a food processor, add the chickpeas, lemon juice, minced garlic, tahini, paprika, salt, olive oil and pepper.  
  • When the beets are cool enough to handle, add them to the food processor and purée all ingredients together.
  • Serve in a bowl and sprinkle with dill for garnish.
