  • 1 cup (about 120 grams) rhubarb
  • 2 cups raspberries or 1 cup mixed berries
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • Pinch of salt

INSTRUCTIONS

  1. Preheat oven to 325 °F.
  2. Grind gluten free rolled oats and almonds in a blender or food processor. Transfer it to a large bowl, add baking powder and cinnamon.
  3. Place bananas and organic free range eggs in a blender and blend until you get a smoothie-like liquid.
  4. Pour banana-egg mixture over the dry ingredients in your bowl and add in some mixed berries or raspberries. Mix well, until all ingredients are fully combined.
  5. Divide the batter equally among 12 muffin cups.
  6. Cut rhubarb stalks into half inch lengths and scatter them over the muffins.
  7. Bake at 325 °F for 30 minutes, until golden brown.
